I'm cooking today because I have to work tomorrow. I'm going to make stuffed shells so all I have to do is toss them in the oven tomorrow night. Aha!

I love enchiladas and make decent ones. But, my mom's are the best I've ever eaten. We use ground beef (shredded beef and pork is good too), onions, diced whole potatoes, and diced tomatoes inside (cooked in taco seasoning). On top: enchilada sauce, lots of sharp cheddar and jack cheese, sliced black olives, and sliced jalapenos. On the side: sour cream and guacamole (quacemole, for rams), Spanish rice, and a huge Margarita on the rocks with salted rim. 70

I'm on a strict diet at the moment, so tonight is lean steak salad with lemon juice dressing and a tiny bit of feta on top (and water). Good stuff, but I'd rather have the enchiladas and the booze.

I was taught the art of the enchilada by the mother of a friend of mine. Mrs. Castro claimed it was all in the prep of the tortillias. First she lightly fried them on each side (just a couple of seconds per side) so that they werent so delicate. Then dipped them in the enchilada sauce which she had heated on the stove. Then add the filling, roll and repeat until the tray was full and then dump the excess sauce on top prior to baking them. I've had them without frying and dipping and it's not nearly as tasty.

Yuk. That was dinner?? That sounds like a side dish to me.

I always have 2-3 items at least on the plate. Main dish and something green (at minimum). If there's no starchy item in there, I add rolls or potatoes or something.

My son's palate has finally loosened up and he's eating almost anything I cook these days. He's on a health kick too so GONE are the days when I could take a freaking break and get him McDonald's or something. He won't even get take out from Chipotle's or anything. He's convinced that anything I make is going to be healthier. I hate to break it to him but that dijon/tarragon chicken we had the other night? Heavy whipping cream in there, bud.

He's even given up candy and all sweetened beverages. Smiley_emoticons_shocked

I'm taking him to the doctor today. He's skinny as hell but worried about getting "fat". That's all I need...another kid...eating disorder. Russian I'm hoping the doctor will talk some sense in to him--he's looking like a damn skeleton.

I'm tired of cooking and I'm ordering a pizza and salad tonight and unless his attitude changes, he won't eat any of the stupid pizza. He'll be foraging around for something healthier. La-de-da.

He'd probably be delighted. His most requested meal the last few weeks has been steamed veggies with a whole wheat roll.

This may be the downside of having an almost 16 y/o who doesn't smoke weed. We'll see what the Dr says. He's never been expected to be much taller than his dad (5'11") but I think he's stunting his growth even more. I may be one of those crazy parents that ask for HGH shots or something to help their kid grow.

He'd probably like kale chips. I just made some and they're delicious and packed with vitamins.

If you haven't tried them before you just put the kale on a sheet pan, remove any large stems, drizzle with a little olive oil, a pinch of sea salt and pepper, mix up with your hands and try to get them in a single layer. You'll probably need two sheet pans. Then bake at 275 for about 20-30 minutes or until crispy, transfer to a paper towel and let them dry a few minutes longer. They're good, my three year old even eats them.
