Ain't fancy but FUCK BOB is this good - Riotgear - 08-03-2012
Corn Casserole
1⁄2 cup butter
1 can whole corn with liquid
1 can creamed corn
8 1⁄2 oz. box Jiffy cornbread mix
2 eggs slightly beaten 1 cup sour cream
Pinch each - salt, pepper, sugar
1 cup sharp cheddar
Melt butter in a 9 x 13. Add both corns and cornbread mix; gently mix with fork. Add eggs; mix with fork. Drop sour cream by tablespoons in diff. areas on top of corn mixture; fold in gently. Add seasonings. Top with cheddar. Bake in preheated oven at 350 for 20 to 30 min, or until firm. Cool slightly before cutting into squares. Serves 12 unless I come over.

I can't remember where I found it, but I have the same recipe. I usually make it on Thanksgiving.

You can do it if you want to, but don't be one of those people who change the recipe around and then say it sucked. "The only thing I did different was switch the peas out for corn and the cornbread mix for biscuit mix and it was awful, I can't understand why everyone is giving this recipe 5 stars". You know, one of those people.

I don't think you should use the peas. I think they'll get too mushy, corn has a better texture. I would know these things, right. Har Har
