He'd probably like kale chips. I just made some and they're delicious and packed with vitamins.
If you haven't tried them before you just put the kale on a sheet pan, remove any large stems, drizzle with a little olive oil, a pinch of sea salt and pepper, mix up with your hands and try to get them in a single layer. You'll probably need two sheet pans. Then bake at 275 for about 20-30 minutes or until crispy, transfer to a paper towel and let them dry a few minutes longer. They're good, my three year old even eats them.
