I just found this idea on the 'keto' site.  It looks really good and I have plenty of eggs.

[*]Heat the oven to 425 degrees fahrenheit
[*]Slice the avocados in half, lengthwise and twist to separate. Remove the pit and scoop out 1-1.5 tablespoons of avocado, creating a larger cavity. 
[*]Place the avocado halves in a baking dish, to keep them upright, and gently crack one egg on top of each half. 
[*]Bake for 15-20 minutes. 
[*]Sprinkle with salt and pepper and add toppings (cilantro, bacon, cheese, etc).

On the down side, just looking at them makes me want a Bloody Mary (which isn't on the agenda).

I was going to say to chop up whatever veggies you have, make a simple vinaigrette and fill the avocado with it, but the baked avocado and eggs look really good too.

Eggs and avocados go great together, but it does scream bloody mary. If you happen to have tomatoes, cheese, oregano or italian seasoning and a pinch of salt and pepper, you could half the tomatoes and top them with a mixture of the seasonings, and cheese and bake them along with the avocados. It might not be a bloody mary, but it's still a tomato.

Thanks sal, I do have all of those ingredients. Sounds really good. I'll take a picture of my first-ever baked avocados tonight and post it.

The baked avocado with egg, bacon, and cheese was about a 3.5 out of 5.0 stars.

They would have been much better if my tomatoes hadn't gone bad and I'd cooked them properly (overcooked them by about 3 minutes).

Fish en Papillote. This is so easy, I think I'm going to cook different versions of it every night for dinner until everyone gets sick of it.

I haven't cooked it yet, I made it ahead of time. I drizzled olive oil on the cod and rock shrimp, seasoned with salt and pepper, added raw kale, cherry tomatoes, zucchini, kalamata olives,  capers, red onions, red pepper flakes, a splash of white wine and a pat of butter and a lemon slice. Fold it up in the parchment paper like a little pie and bake at 425 for 15-20 minutes depending how thick your fish is. Then dinner is done.

Talk some more about that parchment paper stuff. Just wrap it up and walk away? For the appropriate amount of time that is.

You take an 18 inch piece of parchment paper, fold it in half and cut into a half heart shape, open it up and you have two sides. Put the fish and whatever veggies and seasonings you like on one side, fold the other side over, kind of tuck everything in and start folding the edges over each other until it's sealed all around. Then you bake it. Don't poke holes in the paper because you want the fish and vegetables to steam in there.

It really depends on the fish as to how long it takes, but 20 minutes is probably safe. You might want to pierce one with a fork after 10 minutes just to check that the fish isn't overcooking and use that to determine when the other ones are done. The fish will flake easily with a fork when it's cooked. The other ones you can serve right in the packet. The parchment paper puffs up while its cooking so it looks fancy.

I remember watching a woman using that parchment baking tool, but not until I saw the roll like a wax paper roll. It was amazing because it didn't catch on fire at 350deg and that it was great! I've never used it but always fantasized about wrapping it around a fac......fish to see how it came out.

It's pretty hard to screw up. Plus if you add a splash of wine, a pat of butter and a lemon slice it makes its own tasty little sauce. All in one cute little packet.

I see them do the parchment paper fish all the time on Top Chef, MasterChef, and Hells Kitchen. I bet you could almost beat Gordon Ramsay in a cooking challenge. Well done Top Master Chef sally!
