a wise man once told me that the most important thing is the location of your grill. He put his as far from his house he could while still remaining on his property. Sanctuary. Duchess, sounds like you just need to carry a six-pack out to the grill to start with. Then there should be nothing to distract you

I use my SS gas grill several times a week, all year round, course S Fla doesn't have much of a snow problem.
When I was in the frosty north, I shoveled snow to get to the grill.
Did you know that if you slide a plate of smoked ribs across the desk at Residents Inn in the dead of winter you get your laundry delivered and hung up, messages hand delivered and several other benefts?

I prefer charcoal too. We bought an expensive gas grill and I don't care for it at all, I went back to using my old rusted out charcoal grill and smoker.

Grills are good, but If you really want to cook without worry of the thing catching on fire, you want the smoke and the heat but no flames where the meat/food is.

I use natural wood no charcoal or propane.

Fire box with a cooking area where the heat and smoke go through no fire where the food is.

Wifey came home the other night with some Cedar Grilling Planks. Never used these things before, but she'd like me to use them when I BBQ for our Mom's this weekend.

Anyone here have experience with these things? They seem like they may be decent, and I can find a few recipes (Wifey is hell bent on a halibut meal), but am curious as to if anyone here might be able to offer some tips and such that they've learned from experience.

The Halibut-Kabobs sound pretty tasty, although I'd probably use some type of dill marinade/seasoning as opposed to orange flavor. Anyhoo, I want to make it a kickass meal, being how it's Mothers Day and shit..and I'm pretty damned good with the BBQ...just never used these before, so I don't want to fuck it up.

I tried the cedar planks a couple of times with salmon. It's pretty hard to screw it up, you soak the plank in water or beer and then dry and season it. Just like the directions in the link you posted. Halibut drys out pretty easily though so I would definitely marinade it and maybe put lemon slices under it instead of the orange.

Yup, defo gonna take your advice and use lemon instead or orange slices. Just bought the Halibut fillet today from our local fresh seafood store (holy fucking shit, $21/lb...cost me $60 for a kick-ass looking fillet). Found a decent, but simple, marinade for Halibut on the triple-dub...and also gonna make a creamy dill sauce too.

Fucking mouth is watering just thinking about it...

Wifey is picking up some primo I-dee-ho bakers as I type. Gonna have a nice salad.. but I'm not sure what's she's gonna get for a veggie. Asparagus sounds good, but that would mean I'd also have to make a cheese sauce....

Creamy dill sauce for the halibut, cheese sauce for the asparagus...maybe some bleu cheese or ranch dressing for the salad? Damn, my arteries are clogging just thinking about it but if I could, I would. Yum.

I guess I'm rather lucky. I eat crap (but good) food all the time. Weight has never been an issue for me.
