I was craving candied apples and decided to make some, so last night I cooked the candy part and got everything ready but I do not think I got to the 304deg to make the candy hard. That is still not dry yet, what a freaking mess. Now I have 8 sticky apples sitting on wax paper.

French onion soup. The one I make at home is good, but I've never perfected the broth. I've had better at a few restaurants. But I've also had worse at a few restaurants.

my neighbor gave me very good recipe (but got lost during move) for french onion soup....i did make it once and used the havarti cheese....was delish, but difficult to serve. you have to put soup bowls in oven to brown cheese at the end and there are friggin hard to get out of oven without a 3rd degree burn...you really do need those bowls which come with handle......i caramelized onions and made broth.I will have to write and get replacement recipe from my neighbor....

I just thought of something the pros do, a torch to brown top....that would certainly simplify this process....
