Everything sounded good except the fried onion strings. I hate that trend with restaurants where they top a steak or burger with a mound of greasy breaded onions. It's basically covering up the taste of the meat with onion rings. If I want onion rings I'll order them at the fair, not on top of my $40 steak.

When I went to Red Robin's to celebrate my nephew's 6th grade graduation, most of the other relatives asked to have the onion strings on the side and ate those in lieu of the bottomless fries.

No breading...just a small mound of deep fried onions cut super thin...but they arent greasy at all.
The chef there is rated 4 stars (Michelin stars?)and her restaurant is rated as one of the top restaurants in new mexico, which says a lot considering santa fe is known for amazing food and restaurants.

I know I can ask for them on the side or just take them off, but it still annoys me. If you top your burgers and steaks with fried onions it makes me think it's shitty quality. And if it's a good steak the chef should be shot.

These are the fried onions I'm talking about. It seems to be a trend lately to top burgers and steaks with them. I guess it's alright at TGIF's or Applebee's, but to put those fuckers on an aged high quality steak is a sin.

Forgive me for I have sinned against you...I love the damn things.
But just to clarify...I didn't eat them with my steak...I mixed them into my garlic mashed potatoes with creamed green chile gravy that I also requested off menu. Lol

I'm making blackened fish tacos with some leftover local Amberjack that I didn't use up last night.

I don't have Hatch or green chilies, but I had 3 jalapenos that I roasted with a whole head of garlic. I peeled off the skins, added salt and pepper, 1 cup of sour cream and a splash of heavy cream and mixed it with a hand blender to make a jalapeno cream to top the tacos. It turned out pretty good, I could eat it by the spoonful.

My daughters boyfriend made us chicken and andouille (spelling) sausage gumbo...he's from Southern Louisiana...so you know it was soooo good!

I made vegetarian enchiladas, salad and Mexican rice. The enchiladas (besides softened corn tortillas) contained onion, garlic, a ton of spinach, Mexican seasonings, a small amount of ricotta, 12 cup of sour cream topped with Mexican cheese blend, green enchilada sauce, a little more cheese and some green onions on top.

It was okay. You could do a lot with the basic recipe (guacamole, tortilla chips on top, a layer of refried beans, diced tomatoes, jalapeƱos.....). You could just pile the salad on top of the whole thing.
Anyway, it was ok.

I have a yen for a BLT. I have a bunch of fresh tomatoes and I really like the smell of bacon cooking. I think it's divine until I start thinking about the poor porker.
