RE: what's for dinner? - Blindgreed1 - 10-09-2015 The weather here has been spotty lately, so I had taken out boneless pork country ribs to Bar-B-Que but in the Am when I woke up it looked like rain, so I seasoned up the ribs and threw them in the crockpot. Dug through the pantry and fridge looking for ideas. Here's what I came up with. I dumped a bottle of roasted sesame dressing over the ribs and added enough water to cover the ribs completely and went to work. Came home and chopped up 2 tomatoes, 4 carrots, an onion, a green pepper and 4 stalks of celery. The meat had fallen apart by then so I stirred it vigorously and added another cup of water with a tablespoon of habenero hot sauce. Let it cook for another hour and served it over rice. OUTSTANDING! Fun Fact: Unlike Salmonella (typical bacterial based food poisoning) Trichinosis is a parasitic based illness where some type of roundworm I can't remember gets in your gut and causes havoc until you can't be three yards from a toilet. Modern vaccination of pigs bred for the food industry has seen trichinosis become a non-issue and many modern cuisine restaurants are cooking a lot of pork cuts medium rare to medium. RE: what's for dinner? - sally - 10-10-2015 You really do have to cook country style ribs for a long time, it's a tough cut of meat and needs to be cooked slow and low with whatever cooking method you're using. When I put pork chops or pork loin on the grill I'll cook it until slightly pink on the inside however, but I'm wary of any temp less than that. I had this at a BBQ a couple of years back. 2 couples refused to eat the meat because the ribs were pink next to the bone. I did my best to explain that the ribs were smoked and get that pinkish hue, but they weren't having it. They left and returned with a bucket of chicken (not even kidding).
