What 2-3 knives are the most important? I'm told that if you buy the right ones they will be all you need for the rest of your life.

My first thought was , the one that can reach through the chest cavity and through the heart. is that weird? But probably a butcher knife then a paring knife and a serrated knife 8" long.

For someone like you who isn't a culinary genius with perfected knife skills, this is the one I would recommend for chopping vegetables and such, the Santoku or Japanese style knife. After that you would need a slicing knife for meat and a pairing knife. But the Japanese style is what you will be using the most without cutting your fingers off.

That's one that I was looking at. I just bought a Calphalon bread knife and it cuts through my fake bread like it's buttah.

Whichever ones my kid has sharpened last.   Don't care if you own a $100.00 knife of a $10.00 knife,  they both dull out quick when hacking away at frozen chicken   hah

I used to take lunch with Mike at work years ago have a few beers and he would feed his 2 boxers raw chicken, it made a horrible sound as they gobbled down the pieces, crunching dripping smacking their jaws around and when they looked up the juice was all over their necks, mouth in their teeth.............yuck!
