what's for dinner?
Everyone in my house likes salmon except me. I like it raw with sushi, but I don't like it cooked. I know it's the healthiest fish too eat, but it's gross.

I don't like it cooked right through to death so it gets that pale powder pink colour about it. I like it just cooked enough to flake but still be bright pink. 9 minutes in a 200C oven and a four minute rest and it's perfect for me.

But yeah, fresh sashimi quality salmon is pretty awesome.

My mom used to make salmon loaf. I hated that nasty stuff. I don't like salmon served in any form.

It's awesome raw it you haven't dared to try it yet, but when it's cooked it's oily and fishy. Yeah I know fish is supposed to taste like fish, but it's overly fishy.

Me too. Rolled in some olive oil and freshly crushed garlic, seasoned with salt and pepper and baked in the oven.

Sally, what's the last pizza you cooked in your pizza oven? I really am interested in knowing. I'm so hungry right now I'm thinking about all kinds of food porn and fried chicken too. I have no idea where THAT is coming from but this isn't the first time I've had a yen for friend chicken recently.

I usually put out a bunch of different toppings and everyone makes their own. My favorite is a Margherita pizza with fresh buffalo mozzarella, tomatoes, basil, garlic and drizzled with olive oil.

I need a better dough recipe. The one I have is a neopolitan style recipe from Italy where I bought the oven. It's pretty good , but it's a pain in the ass because you have to use it as soon as it rises. I need a dough recipe that I can make ahead of time and it can sit in the fridge for a day or so.

Why don't you use the Rhodes dough; it is as close to homemade as anything else. Think you could put it in fridge and then when ready put it out to rise.

I've never heard of Rhodes dough.

When people see that oven in my kitchen they have pretty high expectations. I need a real NY style recipe and learn how to flip it in the air like an old Italian grease ball.

You sound like you are a good cook and you have never heard of Rhodes? Find the frozen bread, dough, etc., in super market. They come in dinner rolls, different shapes, and loaves. It is excellent and probably used by all the pizza joints in New York and Chicago. Just try it, you will like it. I have only used the white dough, but I am sure that now days they also have whole wheat, gluten free and on and on....You can flip it to your heart's desire or you could just get a prepared crust all ready for the toppings....
