I like one pot meals the best because it's easy clean up.
One that I do with shrimp is saute chopped fresh vegetables in a pan with olive oil ( whatever veg you like, I use peppers and onions), add the peeled and deveined shrimp, add a tablespoon of tomato paste, a small squeeze of fresh lemon and a couple of packets of Sazon Goya seasoning. Add just enough water to barely cover, chopped olives (optional) and a handful of fresh chopped herbs ( I use cilantro, basil and oregano) just make sure herbs are fresh. Simmer just until shrimp are just cooked through. Taste for seasoning and add salt and pepper if needed and a dash of hot sauce if you like it spicy.
You can serve it over yellow or white rice, but then it becomes a two pot meal because you have to cook the rice separately.
