Cauliflower rice is great.  I hadn't had rice in over 2 years due to the carbs. But last week my sister made cauliflower rice and chicken and brought some over. 

I liked it as much or more than standard rice and it's got like 1⁄4 the carbs and calories.

Anyway, I bought a frozen bag of Cauli-Rice it at Fry's and I'm gonna try it in this spicy beef stir fry dish tomorrow night.
