Amazing Ceviche Recipe...tried and true and always a favorite everywhere I take it.
2 lbs peeled raw shrimp cut in half
juice of 15 limes and 10 lemons
4 large yellow onions, chopped
at least 1-1/2 tablespoons of salt (to taste)
1-2 bunches of fresh cilantro
3 teaspoons black pepper
fresh chopped jalepenos to taste
Add all of it to a NON-METALLIC container, mix and let it sit the fridge
for an hour or until the shrimp turns pink. (acidity from the citrus cooks the shrimp)
Eat with corn tortilla chips, or like I do sometimes, a spoon. Its so damn good.
