You have a gas range, don't you? When you spill oil on gas burners it doesn't go up in flames like an electric burner. It will flame up, but then it dies out. It's the electric burners you don't want oil to spill on.
Or you could get yourself one of those electric fry daddy's and start frying up a mess of chicken and livers with no worries at all. They have a max oil line that assures the oil won't overflow.
Or you could just skip it. The grease stinks up the whole house and clogs your arteries.
