Fun Fact: Unlike Salmonella (typical bacterial based food poisoning) Trichinosis is a parasitic based illness where some type of roundworm I can't remember gets in your gut and causes havoc until you can't be three yards from a toilet.
Modern vaccination of pigs bred for the food industry has seen trichinosis become a non-issue and many modern cuisine restaurants are cooking a lot of pork cuts medium rare to medium.
If you're into hunting your own meat, wild pork should always be cooked until medium to done though.
