I made some spinach stuffed tomatoes. Cut the tomatoes in half, take out the seeds and top with fresh baby spinach and a mixture of fresh bread crumbs, green onions, minced garlic, fresh chopped basil, thyme, parsley and salt and pepper. Drizzle with a little olive oil and top with gruyere cheese. Bake at 350. So good.
