[Image: yahoo_pumpkin.gif] [Image: yahoo_pumpkin.gif] [Image: yahoo_pumpkin.gif] ....this cookie is very crisp, large, aromatic and spicy. when you bake them your home will be redolent with a can't-resist scent of spices.......so here is my recipe, if you try them, let me know what you think ...you need an electric mixer, like a kitchen-aid....................in the mixer bowl mix up the following: 2 cups sugar.1 12 cups shortening. 2 large eggs. 12 cup dark molasses. 1 tsp. salt. 2 tsp. baking soda. 2 tsp ground ginger. 2 tsp. cinnamon. 2 tsp. ground cloves. dash of mace. DON'T SKIMP ON THE SPICES, AND DON'T LEAVE ANY OUT. once it is blended start adding 4 cups of flour, sometimes i need more. you want a dough you can work with, not too sticky. heat oven to 350 degrees F. grease cookie sheets and have cooling racks and a spatula handy. ~~by hand roll one and one-half inch balls of dough. take a glass and dip the base in sugar. use the sugared glass to press the dough balls semi-flat. that gives the cookies a bit of sugar on top when done. bake for about 15 minutes. remove to cooling racks with spatula and let them set, they will be crisp when cool. ~~~i promise you will love them! Mace is a spice...It's similiar to nutmeg...Jesus Christ, how do I know that. ::blink::

This practice is actually very common with a wide range of spices, since cooking changes the flavor profile of a spice and tends to make it bitter. Obviously in things like baked goods and roast meats, the mace is added at the beginning, along with all the other ingredients.

Mace can be used much like nutmeg would in things like cakes, scones, and spice cookies. It can also be used in curries, soups, cream sauces, roasts, and a range of other ingredients. Some traditional Middle Eastern and Southeast Asian spice blends also call specifically for mace. To refresh mace which has gone stale from long storage, lightly toast it before use.

They sound wonderful. It's still humid and hot here. I can't wait untill it cools down a little and I can open up my windows and bake up a storm. Oh and I knew what mace was, although I don't use it often.

Probally homemade Italian bread andmy husband makesHungarian pastriesthat are a cross between a croissant and a soft pretzel. They have a name , but I have no idea how to spell it, I just know they are delicious.

Jesus Christ, you could find a way to argue about anything. Just because you don't recognize the four seasons doesn't mean it isn't real in other parts of the world. In New England all ofthe seasons have distinct differences inconditions, temperature, moisture and alterations in the length of day and night ::finger::

"Autumn" is still autumn no matter where you live.

It's just you yanks shortening and abbreviating everything so all the information will fit into your pea brains.

Like removing the u from colour, pointless, lazy and stupid, three words that just about sum up the average yank.

Why not get rid of the first o and just use the word "clor"?, one syllable, saves time so you can eat another fat burger.
