Playing the drums. When I was 15 my parents bought me a drum kit for my birthday, I thought it would be really easy to just "play the drums" but alas it is fucking hard and far more complex than it looks.
I thought all you needed was a drum kit and a good sense of rhythm but no.
Also Ice skating, I also thought this would be a piece of piss but alas no, I took my then girlfriend to the local ice rink and she asked me "Have you ever skated before?" I said "No, but how hard can it be?" an hour later my ass, knees and elbows were all covered in bruises I fell down that many times.
Any other things you can think of that look easy to do but aren't?.
Cooking...and that's not a smartass response...I follow the directions I am given & it never, ever comes out the way it's supposed to.
Shooting pool.
I grew up around players who would make simple angles and bank shots look like the most natural thing in the world to do. Being adept at pool is one of the hardest things I ever did. I got good enough to make money playing.
Those days are over since I have to learn to shoot all over again with my dominant eye being blind.
Riding a horse is also difficult. You don't just hop up on its back and hang on. I love to ride, but I don't get to often.

Winning in a casino - any game - looks easy - very very hard.
I agree that playing the drums is very difficult. Trying to get both hands and feet all doing different things at the same time is really hard.
Managing forums is definitely a pain in the arse at times.

Yes, one foot on the bass drum, one foot on the hi-hat, one hand tapping the hi-hat the other hand hitting the snare drum. Then you have to remember all the transitions between verses, and the variations in the middle eight.
All the bands I was in sucked, but not because of me, I was a satisfactory drummer, but you should have heard some of the "songs" we came up with!
