Most people don't eat the skin, that's my favorite part. I leave them in the oven extra long so the skin gets real crispy and then I just eat the skin with the A1 sauce.
Another good way to make baked potatoes is to poke holes in them with a potato peeler and put slivers of garlic in there and then coat with olive oil and salt and pepper before you bake them.

In the frozen food section there are these boil in a bag things and I've put some of the broccoli & cheese one on a baked potato. NomNomNom

I miss baked potatoes.
I liked them best with crispy skin, butter, sour cream, chives, pepper, and sharp cheddar. But, extra spicy chili and cheese baked potatoes were a close second. Potato skins (all types, especially with bacon) used to be my favorite appetizer.

Potatoes are probably my favorite food. There are so many glorious ways to cook them. Unfortunately every way leads to being a fat fuck.

That link Clang posted actually has some good potato recipes. The Greek potato wedges sound good. It's healthier than loading them with butter and sour cream, but it's still high in carbs.

If you only eat them once a week or so how bad can it be? People on diets should take one day where they can deviate into the wonderful world of tasty stuff. A reward for keeping on track for the other 6 days.

That's actually a pretty good site Clang posted. They have other stuff besides for potatoes. I'm going to make the baked cod with garlic and tomatoes and the greek potato wedges for dinner. Easy and quick.
