One of my earliest gigs at the casino I mentioned elsewhere was running the freebie buffet they had as kind of a forever promotion out of California and Arizona. The tour buses catered to lower income folks, a shit ton of Mexicans and old people. They came in on these big ads buses and were given free buffet coupon booklets. Which was basically scrambled eggs, bacon, and coffee or juice with hashbrowns. We serve them up and it was free as advertised. No restrictions. We were allowed to put out a bucket for tips to split between three of us, my brother, my girlfriend and me. But the Mexicans were notorious thieves and the old folks would steal food. So I was constantly sneaking up on people and growling "fuck you doing, dog?" In Spanish. One time a caught a dude literally dipping money out of the bucket as I came up, and when I said that he about jumped over the counter. Funny as hell but I threw him out anyway. I place small portions of food on my plates as if it was received in a restaurant. Therefore, I go up to the buffet around a dozen times, between the salad, soup, entree's and desert. Requiring the attendant returning to our table a dozen times clearing the plates, as well as refill my beverage glass. And then bring/serve coffee at the end. In a restaurant the server, although brought the food, only comes to my table around 3 to 4 times. (so 20%) |
