But probably a butcher knife then a paring knife and a serrated knife 8" long. For someone like you who isn't a culinary genius with perfected knife skills, this is the one I would recommend for chopping vegetables and such, the Santoku or Japanese style knife. After that you would need a slicing knife for meat and a pairing knife. But the Japanese style is what you will be using the most without cutting your fingers off.
