Eggs, celery, onion, fresh dill, chopped dill pickles(not relish), mayo, mustard, and a splash of vinegar.

2 pounds russet potatoes
1 cup mayonnaise
4 teaspoons sweet pickle relish
4 teaspoons white sugar
2 teaspoons chopped white onion
2 teaspoons mild mustard
1 teaspoon white wine vinegar
1 tablespoon minced celery
1/2 teaspoon shredded carrot
1/4 teaspoon dried parsley
1/4 teaspoon pepper
Salt to taste

Yeah, i don't use relish anymore, I just chop up pickles.

What no bacon? I can't remember all the spices and stuff my mom put in the potato salad but I remember the bacon.

Sometimes I do bacon and green onion. I dont like potato salad that is sweet though so no sweet relish or sugar in mine.

Green onions would taste good in potato salad, I love to put them in egg drop soup and they're my favorite part of Green Goddess dressing. I've never been able to find a green goddess dressing that tasted as good as Mom's homemade version though. Can't beat fresh green onions from the garden.
