Stuffed poached chicken and mushrooms - Ma Huang Sor - 04-20-2012

My favorite quick meal. While poaching the boneless chicken breasts in a frypan with a little water, prepare the stuffing:

A package of chevre
A bulb of garlic, chopped
salt and pepper and curry or chile powder.
Mix all these three ingredients to a nice thick paste.

When the breasts are pre cooked, cut a wedge out of the top of each breast like a lid over the hole you make in the middle of the breast. Stuff the hole with chevre, and put the flap you cut out over the stuffed hole. Broil until golden brown.

While you're doing that, hollow out the mushroom caps and stuff with the rest of the chevre. cook in a frypan face down til the cheese gets a little brown and crispy.

Put the mushrooms on the side with the chicken, and any veg you like will do on the side.

Instant yumminess (about 20 minutes total cooking time)

that sounds very good...chicken breasts lend themselves to a lot of creative recipes. love mushrooms! just pick the flavors you like to accompany your chicken breasts.

sometimes i'll saute & simmer the boneless breasts with a roux and dry white sherry. and the mushrooms of course~

Roux are fun to make, but you are a slave to the frypan til it's just the right consistency. Plus I'm sort of allergic to cream of tartar.

I wish I could justify hiring someone to cook for me. I had a pbj for dinner last night. Pitiful.

I don't care how old ya get, a PB&J with some BBQ chips and a cold glass of milk is still damned tasty.

Ha! He was out of town evaluating an injured racehorse.

That's almost exactly what I had if you substitute Cheetos for the BBQ chips. Smiley_emoticons_wink
