New Year's Eve Snacks - NightOwl - 12-27-2012 Does anyone have some favourite snacks for NYE? keep it simple! I love to make Rosemary Walnuts very addictive! You may have to make 4 cups they get eaten up fast! 2 1⁄2 tablespoons unsalted butter 2 teaspoons dried rosemary, crumbled 1 teaspoon salt 1⁄2 teaspoon cayenne 2 cups walnuts Directions Melt 2 1⁄2 tablespoons unsalted butter with 2 teaspoons dried rosemary, crumbled, 1 teaspoon salt, and 1⁄2 teaspoon cayenne. Pour this mixture over 2 cups walnuts, tossing to coat them. Bake the nuts on a cookie sheet at 350 degrees for 10 minutes. Carmelized bacon! 1⁄2 Cup Bro Sugar 1⁄2 Cup Chopped or Whole Pecans 2 TSP Kosher Salt 1 TSP (Fresh) ground pepper 1⁄8 TSP Ground Cayenne Pepper 2 TBSP (Pure) Maple Syrup 1⁄2 LB THICK SLICED Applewood-Smoked Bacon Preheat Oven to 375 Have a wire rack over an aluminum covered cookie tray, if no wire rack a plain cookie tray will work. Combine all the dry stuff (including the nuts) in a food processor until it has a fine texture. Then add the maple syrup to moisten it up. Cut the bacon strip in halves or bite size portions - Use a spoon to spread the mixture atop the bacon and bake for 25-30 minutes. You want it to brown (crisp) but not burn. If it is underbaked, the bacon will not get crispy. Take it off the tray and place upon anything that will soak up excess grease from the bacon, I use papertowels and a plate. Let it cool to room temp, and serve with a good cocktail!!!! Make lots though- it'll go fast. My OL makes a similar dip OBK. She uses 1 lb of deer burger, 1 lb of hamburger, 3 lb [large block] block of Velveeta. and 1 quart of salsa. She browns and strains off the grease of the burger. It's pretty simple and very very good. A little spice to it as well. Always the first to go. Jalapeno Popper Dip 1 (8 ounce) package cream cheese, room temperature 1⁄2 cup mayonnaise 1⁄2 cup cheddar cheese, shredded 1⁄2 cup parmigiano reggiano (parmesan), grated 1 (4 ounce) can sliced jalapenos (pickled), drained 1 (4 ounce) diced Green Chiles, drained 1⁄4 cup panko bread crumbs 1⁄4 cup parmigiano reggiano (parmesan), grated Mix the cream cheese, mayonnaise, cheddar cheese, parmigiano reggiano, chiles and jalapenos in a bowl and pour into a baking dish. Mix the panko bread crumbs and parmigiano reggiano and sprinkle over the dip. Bake in a preheated 350F oven until the sides are bubbling and the cheese cheese has melted and turned golden brown on top, about 20 minutes. Serve with tortilla chips. ** Sometimes I have a hard time finding sliced jalapeno's and I don't care to slice them myself so I use two 4 oz cans of green chile's instead of one jalapeno and one chile. RaisingAPrince, your Jalapeno Popper Dip sounds delish I keep Panko Bread Crumbs on hand, all I have to buy is the green chiles your dip is on the list for my New Year Gathering also and I like those new Artisan Tostitos so I'll have them and Garden of Eatin Blue Corn Chips. Jalapenos stuffed with cream cheese, wrapped in bacon and put under the broiler is another quick and tasty snack.
