I have several I make:
Pinto Beans with Ham Hocks, Sausage, onions, Jalapeno and chili powder and a dash of garlic Beef Stew, the recipe varies from time to time Pork Roast with onions, carrots, potatoes, garlic, celery maybe some leeks Chicken with the above Ever had Coq Au Vin? Fabulous stuff, I make in a big dutch oven on an open fire Veal Marsala..

I do Gumbo too, course its got several meats in it

I like one pot meals the best because it's easy clean up.
One that I do with shrimp is saute chopped fresh vegetables in a pan with olive oil ( whatever veg you like, I use peppers and onions), add the peeled and deveined shrimp, add a tablespoon of tomato paste, a small squeeze of fresh lemon and a couple of packets of Sazon Goya seasoning. Add just enough water to barely cover, chopped olives (optional) and a handful of fresh chopped herbs ( I use cilantro, basil and oregano) just make sure herbs are fresh. Simmer just until shrimp are just cooked through. Taste for seasoning and add salt and pepper if needed and a dash of hot sauce if you like it spicy. You can serve it over yellow or white rice, but then it becomes a two pot meal because you have to cook the rice separately.

I went through a phase of baking poultry and various veggies and potatoes in those turkey baking bags, they kick so much ass and make super moist baked chicken or turkey while making cleanup a breeze. Kinda fell out of the habit because the time line for dinners these days is shorter. Too damn tired.
Thank god I am oblivious to the opinions of others while caught in the blinding splendor of my own cleverness.

Roasting bags are great, just as handy as zip lock bags. I use the parchment inserts for the DO a lot

Sally we used to make something called Chicken Junk. Start out by boiling the chicken, and you can use the same pot and water for the rice when the chicken is done and then add the mushroom soup after-garlic mushroom is better. Sometimes I kind of miss that meal, now I make it with brown rice and, well I haven't used cream of mushroom soup for anything in a long time.
I like making stir frys. Not really 1 pot, but 1 pan. Just chop everything up and put it in. |
