How do you like yours? For dinner I made them on sourdough bread with bacon, Fontina cheese, tomatoes and fresh spinach until the spinach was just wilted and the cheese was melted and bubbly on the perfectly charred bread.
I took one bite and chewed it up and spit it out in a paper towel while no one was looking. I'm bulimic/ anorexic like that. I could have eaten three of them if I could somehow get myself to not give a fuck.

White bread, grilled and with cheese. Don't really eat grilled cheese sandwiches these days. Especially fancy ones. Ah the folly of youth..........

I don't know why I torture myself. My husband is fat and doesn't give a fuck, my kids are young and thin and nothing they eat affects them. So they all enjoy their grilled cheese while I sit there salivating like a starving dog chained to the front porch.
But I did think of another one, brie and harvarti with thinly sliced pears and ham on a grilled croissant.

I think it's damn near impossible to make a bad grilled cheese.
I liked them best with sharp cheddar or Swiss, a slice of ham, mayonnaise, a little mustard, and a very thin slice of tomato inside sliced extra sour dough bread (sprinkled outside before the last flip with Parmesan for extra flavor and crunch).

Take a spoonful of mustard a slice of bread and a chunk of cheddar, take a bite out of each one and wash it down with a Molson. but only at midnight.
