This was tonight's dinner. Shrimp salad served over yellow tomato, fresh greens, hearts of palm, olives, fresh jalapeno and a pickled, spicy giardinera salad I bought from a local market. I posted the basic dressing for the shrimp salad. The hardest part is peeling and deveining the shrimp. Once that's done steam the shrimp with a scoop of old bay seasoning and 1 lemon cut in half. Cook until just pink and drain and leave the shrimp to cool and then roughly chop them. Mix with the dressing, finely chopped celery and finely chopped red onion. Put on a bed of lettuce and garnish as you see fit. Or shove it up your fat ass. Just remember to keep it healthy.
Dressing for shrimp salad
1⁄ 2 teaspoon kosher salt
1⁄ 2 small lemon squeezed
1 cup mayonnaise
2 teaspoons Dijon mustard
1 tablespoon white wine vinegar
1⁄ 2 teaspoon coarse ground black pepper
1 teaspoon dried dill or 1 tbsp. fresh
Mix all together and mix with shrimp and onion and celery.

I love ceviche, but I figured these fat fucks would like something mayo based. If they can manage to keep it off a loaf of bread it will still be pretty healthy.

I've never made a nice shrimp salad like that (nor ceviche) at home, I don't know why not.
I order them when I go to the Peruvian place up the street.
I'm the only one in my family (aside from my nephew son in So Cal) who loves fish in general. But, they all like shrimp, so I'll try the recipe next month.

I've had the angus steak with chimichurri sauce (the green version) a few times there. It's effin' delicious.

Anyway, don't feel too awkward about the proctologist Clang.
He or she will probably find it refreshing to be dislodging something other than a gerbil, a piece of dildo, or a Trump butt-plug.

That looks really good.
I don't like cold or soft tofu very much, but love firm fried tofu. Now I'm kinda craving some.
Cauliflower rice is really good too, without all the carbs of regular rice.

I really like rice & veggies so I think it looks great. I'm unsure about the tofu though.

Tofu isnt too good in its natural state. You have to press the water out of it first. Then do something to it like fry or bake it to get the outside crisp and cook it in some kind of sauce to absorb the flavors. After that its pretty good.

Another simple healthy meal I love is avocado stuffed with tuna or crab meat, with a little lemon and pepper.
We've got two very ripe avocados we have to eat tonight and I'm not going out to grab meat or fish today.
Any good ideas for avocado-based meals that don't include meat/fish, bread, or chips sal?
