Time to brine the turkey. Smiley_emoticons_biggrin I take 1 cup sea salt and soak the turkey overnight in it with water to cover. The next day I wash it well. It adds tons of moisture to it. at least 10%. I cook it leg towards the back wall of the oven and spin it at half time. The dark meat in the drumstick takes longer to cook. 165deg is hot enough and when standing the beast will gain 10 extra degrees. Fuck the FDA.......and their 180 deg bullshit. take it out at 160 and after 10 min it will rise to 170 deg just sitting on the counter.
