I stuff my birds. I use frozen birds. I've never given anyone salmonella. Just thaw the thing out in the fridge over a few days. Wash it properly and don't use any surfaces or utensils that I've used with the poultry on anything else without washing and disinfecting them. Put a fucking meat thermometer in the thickest part of the bird. It's not that hard.
I do the same with chicken. All year round..
