I roasted some elephant garlic tonight and some of it turned green. Has this ever happend to you? I read that it is normal, but seriouisly it is not appetizing looking!
It's never happened to me because I know how to properly store, prepare and cook garlic. What you did was cause a chemical reaction with it.. It's safe to eat, however, and similar to when the yolks in boiled eggs turn greenish when you over boil them.

I am completely guilty of getting garlic and not storing it properly and intending to use it and then I take a shortcut and use the minced garlic in a jar.
