I read a NYT’s article about 15 healthy/easy dinners to make in 2025. Not one of them actually looked easy but worse, there wasn’t one that appealed to me. Tofu with….blurg. Salmon with…blurg.
I’m not a fan of seafood and while I don’t dislike cooked Tofu, I don’t like it enough to want to cook it myself. I’m a mid western eater from way back (some poultry, less often red meat, with a carb and greens). If I try to change that up in 2025, I could see incorporating more Mediterranean style foods but that’s about as far as I’m willing to go.
