I cried when Old Yeller died, reading Where The Red Fern Grows, watching It's A Wonderful Life, the scene in Ben Hur when he gets his mom and sister from the leper colony and the end of Dances With Wolves when the Indian brave says to Costner, "don't you know I'll always be your friend?"
I cried when we sang On Eagles Wings at my great uncles funeral.
But, fortunately, I haven't had to cry about a lost parent, sibling or child.

So I baked two pies today, got my stuffing ready, will just have to mix it into the bread and stuff it up the birds butt. Making extra because there is never enough.
Cheated a bit and bought a couple packages of the premade Bob Evans mashed sweet taters.
BUT that being said, I am channeling LC's spirit and about to go make my cranberries. Almost cheated on them too, but decided WTF, the real ones were on sale.

Big turkey is in the smoker, dressing is made, gravey is started and everything else laid out ready to finish in the am.
Have about 18 coming, should be a good feed and a biggish crowd. Plenty of chips and dips and drinkables on hand.
I always get a little tear nowdays, I am out here in Fl and all my family are back in Texas. I set my table with my grandmothers china she spent so many years and green stamps to collect and it never got used until I got it.

I think I should have worked out for a few weeks in preparation for this thing. Six proves it can be done like all the other years. My alarm is set for 6 AM.

My mom is putting the finishing touches on her home made apple pie. She made home made rolls and cranberry sauce a few days ago. The bread is in pieces for the stuffing. Geez, the woman doesn't understand what cans and CostCo are for. I guess I could give her grief for not making the vanilla ice cream from scratch.

I think I fucked up the stuffing. I put it all together last night thinking it would be fine overnight and now it's like mush. Hopefully it firms up in the oven or it's going to the dogs.

sally..I have a lot off leftover stuffing. Want some? I premade mine too, but did not mix the filling and the bread together until this morning. That seemed to work.

That's what I should have done, but I was too set on not having to do anything today other than pop it all in the oven. It still tastes good, cover it up with all the rest of the crap and it's ok I guess. Plus I make the best gravy in the world so that makes anything taste good.

Everyone got out of here about 5, I just got done with all the dishwashing and bagging up the leftovers. Got lunch made for tomorrow as well as a leftover rescue batch to take to work, should only be a couple guys around, but hand made nanner pudding, dressing and gravy should buy me a couple more days of loyalty.

Mr Bee loves my stuffing, and keeps asking me to make extra. So I did this year and he is in stuffing heaven. He has to work tomorrow and when I was putting leftovers away I asked if he wanted me to do up something for him to bring for lunch, he said all I want is a bowl of stuffing.
I have enough turkey left to choke a horse, and he wants stuffing. Still have turkey soup left in the freezer from the last time I did turkey, a month or so ago (got a smoked one). So I do not know what I am going to do with all of it.

Well, I happen to think my gravy is best I have ever tasted according to just about everyone i have ever known. It is very rich and heavenly.....I could easily win a contest between u two novices.
Re dressing, I put cornbread crumbs and white bread crumbs in plastic bags night before and squash them with mallet to get crumbs. Chop up celery and onion and place in plastic bag. Next day, saute celery & onions in butter. Dump crumbs, and cooked celery/onions in bowl, then add liquids. I use broth from cooking giblets, and then turkey juices later in cooking process. It is never dry and it might also be best i have ever tasted....I do not cook anymore, but back in the day, I cooked a lot. Of course u have to use appropriate seasonings for the dressing to your liking (sage, thyme, salt, pepper, etc.).

P.S. I keep meaning to use the Bell's seasoning that LC always used and recommended, but i can never remember to look for it in market. I didn't cook this year, but next time i do dressing I am going to use that for sure.
