these brazen characters think they are deer and evidently do not know it's Thanksgiving. heh. they are all over the neighborhood, i found a couple living under my kitchen steps outside. hahaha they figured they'd be first to get the daily birdseed.

Time to brine the turkey. I take 1 cup sea salt and soak the turkey overnight in it with water to cover. The next day I wash it well. It adds tons of moisture to it. at least 10%. I cook it leg towards the back wall of the oven and spin it at half time. The dark meat in the drumstick takes longer to cook. 165deg is hot enough and when standing the beast will gain 10 extra degrees. Fuck the FDA.......and their 180 deg bullshit. take it out at 160 and after 10 min it will rise to 170 deg just sitting on the counter.

I'm using my pickling bucket. Tonight my sons 6 yr birthday party is gonna happen and I'm watching my daughters 2 yr old. As a matter of fact I can smell her now............dammit! I hate this part. The place is a freaking madhouse. I would'nt have it any other way though.

well i've chopped up pounds of onion and celery, now i have to go make cranberry sauce.
then tonight around midnight or so i stuff the bird and put it in a low oven overnight. i've done this for years since i always get one the size of an ostrich. by noon godzilla turkey is ready and my ravenous yeti sons have been driven mad by the smell. heh yep, fuck the FDA, i haven't poisoned anyone yet.

I do the Turkey and mashed potatos and keep the wood stove stoked. Play darts in between and drink brandy shots. Lots-o-fun. we are a happy group. My wife made 2 custard pies from scratch and is working on my pumpkin pie. Birthday party is almost ready.....Rock-em Sock-em.

HAPPY BIRTHDAY SON OF MAGGOT!
today is my sister's birthday too. a fire sounds nice, it's so cold and damp and nasty and wet. thankful to be inside and cozy. i bought pumpkin, apple and pecan pies at the bakery. i don't feel like doing all that work anymore, and they are very good. but i will have to make mince pie for Christmas, because nobody has them and nobody likes them. except me. Have a Happy Maggot!
