To me, the broth makes the difference. You know, oven-carmelized marrow bones . . . then slow simmered.
I always thought a great fusion restaurant would be one with Vietnamese food and Southern smoked meats.
I'd call it "Pho Que".

Me too. I have two shaggy dogs, two cats, a rabbit and an old, dust fart husband. The dust is ridiculous, I wipe it off and it's back five seconds later.
When the sunlight is just right you can see the dust in the air. It's hopeless.

There is a restaurant here called Twenty Pho Hour. It sounds to me like the Vietnamese are making fun of black folk.

Yep, every recipe calls for cinnamon sticks and every time I've tried it at restaurants that's all I could taste. I've even tried making it at home just using a tiny piece of cinnamon and it fucked up my otherwise delicious beef stock. But if you don't add that flavor profile than it's really not pho.
