I'm having porterhouse and filet minion on Thursday maybe Friday so thinking of a side I thought why not have red potatoes cut up in a cream of mushroom sauce with some shredded cheddar on the top cooked at 350 for 45 min covered then taking off the cover for the last 10 min.
I just thought of that, maybe with some fresh basil on the top. Waddya think?

Sounds wonderful.
I also do not want to cook/make/bake anything in this hot weather. I had cheese and lunch meat for dinner so far. And will probably have ice cream next.

Back in the day, the neighbors son or son-in-law produced commercials. I remember hearing him say that he used mashed potatoes for ice cream because the ice cream would melt under the hot lights. That's what I immediately thought of when I read Mark say smashed taters is the shit.

I've had St Louis style spare rips and baby back ribs in the slow cooker all day around 6:30 I will broil them for 10 min maybe less to caramelize them. That and some Alfredo noodles with pieces of Broccoli in it should be good. Lot's of spare ribs.
French vanilla ice cream with hot caramel drizzled on it for desert. I'm a regular Martha Stewart without the ankle bracelet.
