I use skin on, bone in chicken breasts, drizzle with olive oil, salt and pepper and roast at 425. Remove the crispy skin and eat it because that's the best part, chop the chicken in small pieces, mix mayo, finely chopped celery, fresh chopped dill, fresh lemon juice and and a pinch of sugar together and mix in the chicken. I either make sandwiches with it or serve it over a salad.

I don't like when the chicken is that big. I know many people think they're getting more bang for their buck, but I'm kind of grossed out by it like I'm eating a mutant chicken.
