My blackeyed peas came out better than ever and the only thing I put in them was minced garlic, bay leaf and salt and pepper. Usually I do celery, onions, carrots and ham. The simple version came out much better for some reason.

Cracker, i nearly lived on fresh-picked GA peaches my last year in fla. i met a man who drove down with a truckload every weekend, and i bought tons! i mean i ate them 3 meals a day! they were the best peaches i ever had in my life.
so i was thinking (in the cookbook thread), do you know how to make pickled peaches? my Mom used to. they were so damn good!! a Southern thing for sure.
i will probably never get peaches that good again ever.
the ones we get up here are always mealy. never the same as those right off the trees.

I don't know how to make pickled peaches. I have never heard of them. Please share if you know how.
I only got one case of peaches this year (I have to get them at the GA/TN border at a little stand). I bought CA peaches a few times and ended up throwing them out. I hate mealy peaches, too.
Remind me about the peaches next peach season and I'll hook you up.
A friend of mine's family owns a vidalia onion farm. Remind me about those, too.

i have to look for pickled peaches with no booze, but Mom made these too:
12 peaches, dipped in hot water and peeled
1 cup brandy
6 cups sugar
6 cups water
10 whole cloves
10 whole allspice berries
6 4-inch cinnamon sticks
Put the sugar and water in a large kettle and bring to a boil. Add the cloves, allspice, and cinnamon. Simmer for 5 minutes. Carefully add the peaches. Simmer for 5 minutes, until tender.
Remove the peaches to a large sterile jar with a snap lid. Pour in the cooking syrup and top with brandy.
When cool, snap shut and store in the refrigerator.
Let it mature for a few days before serving.

By the way peaches are the easiest fruit to can there is, no pressure cooking required just a nice hot bath and hot syrup.

I will believe my experiance if you don't mind, if the lids were wax it would melt off when you boil them before sealing.
I only use wax on jelly.
If the jar unseals from a bump you didn't have them hot enough when you sealed them.
You can leave the rings if you are only doing a dozen jars, if you are doing hundreds of jars like we did every year you have to remove the rings and use them on the next batch.

I would not want to take the chance, shipping them would suck. I reuse the screw on part of the lid but would not want them off until they are used.

When you know something you know it,that's not a hard concept to grasp.
