I can only find poblano, jalapeno, and sometimes pasilla or serrano chile here. I guess the poblano would be the closest thing to what ya'll get over there?

Oh yeah, sometimes Anaheim but not often. Never heard of a Big Jim.

The Hatch chiles are the Anaheim and Big Jim type.

Do you roast them in any special way? I've always thought you just char them with whatever method you have available, cool them in a paper bag and peel off the skin.

I roast mine over a mesquite grill or occasionally apple wood and then toss them into ice water when they come off the grill.

I roast them until charred, put them in a huge bowl, cover and let them steam for about ten minutes.

The skin peels right off.

Love when they are grilling hatch chiles outside of the grocery store here... smells awesome, and they have a crap ton of them available.

Honestly, I'm not a fan of the chimi anyway. If i'm going to eat a deep fried Mexican dish I'd prefer a chili relleno.

Yum. I've learned to make so many authentic mexican dishes...chile rellano being one of them. Anything with cheese is my jam for sure. And cheese red enchiladas with homemade red sauce...omg. I may have to go eat at the Jalisco place again tonight lol

Ok...so.i.had an Ancho rubbed ribeye over a bed of dirty garlic mashed potatoes...with a topping of fried onion strings and creamed peppercorn sauce and grilled asparagus...and a tequila infused wine strawberry Margarita.
And then like 12 Jager bombs and 3 beers for dessert.
I'm finally sleepy...
