Avocado, shredded lettuce, tomatoes and sour cream.
Going non-traditional with a green chile and tomatillo sauce (Northern New Mexico style).
"Cornish" Pasties, tomorrow. Thinking of pickled red cabbage as a side.

I got some chicken out of the freezer yesterday.
Put it in the pan today
added some mustard-dijon
and spinach.
It is a meal I had one time when I was house sitting and that was about all I could find, so I duplicate it occasionally. Its pretty good.

I stopped at the farmers market today and got some great finds that you don’t normally see around here. Fresh purple hull peas that took me an hour to shell but so worth it, fresh from the garden organic collard greens, local lavender honey and fresh hibiscus which I’ve never seen before. I made iced hibiscus and mint tea with the honey as a sweetener.

I didn't have pumpkin seeds so I used sunflower seeds, they were okay, but the soup was awesome
