Don't be shocked but I'm having an urge to cook & I'm interested in one dish meals. When I do cook I always have some kind of green salad, garden salad, whatever you call it so I'd serve that with a casserole.
I did a search before I decided to ask for some of your favorite casserole recipes but it was very convoluted and I didn't feel like searching through threads looking for what I wanted.

How about old-school tuna casserole? Stupid simple and pretty damn good if you have nothing better to do. Probably have all this in your cupboard right now too.
1 large can of tuna, I like albacore in water
2 cups cheddar cheese, grated
1 can of cream of mushroom soup
1-16 ounce box of shell noodles
1-8 ounce can of sweet peas
1 bag of salted chips
Heat oven to 375. Cook shells 2 minutes less than package directions, then drain. Mix remaining ingredients except chips in large bowl and add noodles mix well. Put in casserole dish and top with crumbled chips. Bake for 30 minutes and enjoy

Hi! Not sure if you call this a casserole, but it reminds me so much of North Africa.
MOROCCAN CHICKEN STEW
1 tbsp. oil
1 onion, chopped
2 cloves garlic, minced
1⁄2 tsp. turmeric
1⁄4 tsp. cinnamon
1⁄8 tsp. red pepper
4 whole cloves
2 bay leaves
1⁄4 c. each sliced almonds & raisins
8 chicken thighs, skinned
4 c. chicken stock
1 (16 oz.) can whole tomatoes & juice
1 green pepper, diced
2 carrots, sliced
1⁄2 tsp. salt
1 (19 oz.) can garbanzo beans
4 c. hot couscous or rice
In Dutch oven heat oil and saute onion and garlic. Stir in turmeric, cinnamon, red pepper, cloves and bay leaves. Add chicken and stock; bring to boil. Reduce heat to low, cover and cook 25 minutes. Add tomatoes, green pepper, carrots and salt; cook 1 more minute. Add garbanzos and cook 10 minutes or until chicken is done. Spoon rice into bowl and arrange stew around it, ladle in broth and sprinkle with raisins and almonds.

Australian Meat Pie
This is The Australian Traditional Meat Pie! You can make 1 big one or more
little ones from this recipe!
INGREDIENTS
1 onion, chopped
1 1⁄2 lbs ground beef or mixture of beef, pork, veal
1 cup water or 1 can vegetable or beef broth or 2 beef or vegetabole
bouillon cubes
1⁄4 cup ketchup
1 to 2 teaspoons Worcestershire sauce (to taste)
salt and pepper to taste
1⁄2 teaspoon oregano
1 pinch nutmeg
3 tablespoons plain flour
2 puff pastry sheets OR a top and bottom pie crust
DIRECTIONS
1. Pre-heat oven at 220'C degrees.
2. Brown meat and onion.
3. Add 3⁄4 of the water, stock cubes, sauces and seasonings.
4. Boil and cover for 15 minutes.
5. Blend flour with the rest of the water till it becomes a smooth paste and
add slowly to the meat mix.
6. Let cool.
7. Grease a pie dish and line with pastry.
8. Add the mixture and put the pastry top on, milking or egging the edges
and then pressing down with a fork.
9. Rim edges and glaze with milk or an egg.
10. Bake in a very hot oven 425 for 15 mins and then at 180'C for 25 mins,
or until golden brown.
11. Serve with vegies, fries, or salad.

Then there is the perennial favorite... I bet you have made this.
3 Bean Casserole
1 lb ground beef or mixture of veal, pork, beef
1 small onion, chopped
1 (15 ounce) can pork and beans
1 (15 ounce) can butter beans
1 (16 ounce) can chili beans, drained
1⁄2 cup brown sugar
several squirts of catsup or barbecue sauce
1⁄4 teaspoon dried oregano
1⁄2 to 1 teas. spicy mustard (to taste)
Preheat oven to 350 degrees F (175 degrees C).
Fry meat with onions. Season to your liking. Add pork and beans, butter beans, chili beans,sugar, oregano, catsup and ustard. Mix all together and pour mixture into a lightly greased baking dish.
Bake uncovered at 350 degrees F (175 degrees C) for 1 hour, or until bubbly.
Sometimes I melt cheese on the top at the last moment.
Serve with cornbread. Jiffy is good.

I make a chicken pot pie using the pre-made pie crusts. Easy. This sounds like a nice change. If I get my ass to the store today, I think I'll make it tonight.
I think I'll try it as is but I bet you could add a cup or two of a defrosted peas/carrots/corn mix. Always trying to get my kids to eat their veggies.

I don't care for moroccan food, the cinnamon, preserved lemon and raisins with meat is just offputting to me. The belly dancers are cool though.

The feeling passed but don't let that keep you from posting your recipes, it will return again at some point. I don't do very well with elaborate recipes, if there are a lot of steps & ingredients my eyes will glaze over as I peruse it and I'll quickly lose interest.
I make great sloppy joes and it only consists of burger, salsa & tomato soup. I like simple recipes. Pitiful, yes I know.

Duchess - Make this. Eat with real butter. I promise you'll love it. It literally doesn't get easier. And if you make it for someone else you'll look fucking brilliant.
5 Minute Beer Bread
3 cups self-rising flour
3 tablespoons sugar
1 bottle (12 ounces) beer room temperature
Preheat oven to 350. Mix flour and sugar and slowly add beer. Mix all ingredients well, until smooth. Place in greased loaf pan & place pan in center of oven and bake for about 50 minutes. Remove from oven and take bread out of pan and allow to cool on a rack or stove grates.

I made that meat pie last night. It was good and the husband liked it (the kids were absent).
Sorry to butcher the recipe but I think you could add to it to make it more interesting. Defrosted veggies like I said before, maybe some mushrooms (or drain off some of the liquid early on and stir in a can of cream of mushroom soup), add some cooked potato pieces...
Lots of room to build on the recipe.

this isn't difficult, and it's delicious. do you have a crock pot? put cooked hamburger meat and/or Italian sausage in the pot. layer with cooked pasta. dump a jar of good spaghetti sauce like Barilla's over it. then slice LOTS of mozzarella in. (tip, nearly frozen mozarella is easiest to slice) let it cook on low until all the cheese is melted and gooey.
this isn't really a recipe, just something i do once in a while. throw in some oregano and garlic and basil too if you like.
if you don't have a crock pot, you should get one. it's great for people who don't like to fuss in kitchen. throw stuff in---out comes hot meal. just use your imagination.

Oh yeah. I use it to make spaghetti sauce. I'd use it more if I had ideas like the one you just gave me. I'm not lazy, I just don't like hanging out in the kitchen cooking. It's so time consuming.
