You better post that puppy up, it sounds awesome! I just got some baby spinach and I might have some feta. I need tomatoes. Ugh. They are so crappy here this time of year.

If you look up Ina Garten's Provencal tomatoes recipe I basically did it like that, but added sauteed spinach and crumbled feta to it. They were delicious. I'd rather have good tomatoes, but since you are baking them the quality doesn't matter as much as if you were eating them raw.
